As Director of Culinary Development at The Institute of Culinary Education he has worked with IBM on Chef Watson - a food-focused venture in computational creativity (yep, that's AI, all right). His work has been showcased at SXSW and featured on lots of three-letter acronym type networks but most importantly, he writes and talks about the science of flavour, to help people make food that tastes better.
